The vineyards are in the West of Sicily in Valle del Belice, where the vines grow on a black clay soil at 70 meters above the sea level. The vines are exposed at north/south and with the Guyot training system.
THE WINEMAKING PROCESS
The Zibibbo grapes are harvested during the first week of October while they are naturally drying on the vines.
The harvest, followed by the destemming process, is done manually and then it goes through a cold maceration and a very slow fermentation at controlled temperature.
The fermentation is naturally stopped when it reaches 13,5 % of volume when the residual sugar is around 100 g/l. The wine is then left aging for 30 days in the bottle.
